Finely chopped dill leaves are often used as a seasoning and flavouring agent for various food dishes. Fresh dill leaves along with chopped leaves of chives and parsley is used to flavour various food preparations such as soups, French fries, salads, meat preparations, sea foods, spicy rice preparations, boiled potatoes, boiled eggs and omelettes, home-made wines etc. Dill leaves are used in various pickle preparations and as a filling in sandwiches alongside other leafy greens. Dill can be used as a sauce and a filling, with cottage cheese and other food ingredients. Fresh Dill can be stir fried as a potherb with egg, in the same manner as other leafy greens such as amaranth, arugula, spinach, chives etc. Dill seeds and dried dill leaves are used as a spice and condiment.
Dill Pickles: Dill has a strong tangy flavour and taste and therefore added to prepare different types of naturally fermented pickles. Pickles known for their unique dill-flavour are often referred as ‘dill pickles.’ Normally, fresh dill sprigs are used for pickling purposes. However, immature dill seeds and fresh leaves, sometimes flower heads also are added to the pickles to impart unique dill flavour to the pickles. For making the best-flavoured dill pickles, freshly harvested dill seeds and leaves must be used. Dill pickles from cucumbers/gherkins and dill sprigs are one of the most popular dill pickles.
Dill Oil: Both leaves and seeds or the whole herb may be used for extracting dill oil. Dill oil is extracted by steam distillation. This oil is yellowish in colour. Dill oil has lots of medicinal and health benefits because of the presence of health-enriching antioxidants in it. Dill oil has antibacterial properties. It is good for digestion and for curing constipation. It prevents gas formation in intestines. Dill oil is good for babies too. It may be used for curing flatulence in babies. Dill essential oil is effective in getting rid of sugar cravings.
Dill Water: Dill oil diluted with water is called ‘dill water.’ Dill water is equally useful and beneficial to health as dill oil.
Storage of Fresh Dill: Fresh sprigs of dill herb is washed and dried before putting them into freezer bags before freezing them. Frozen dill sprigs will last for several weeks. Fresh dill may be stored up to a week in a home refrigerator.
