Potato is one of the most ancient and the oldest domesticated food crops. Today, potato is the most important and the largest vegetable crop of the world (both production-wise and consumption-wise). Potato is also used as a staple food in many parts of the world. Potato is a starchy tuberous perennial vegetable; however for vegetable purposes, potato plants are grown as annual plants. Potato plants are considered as cool season crops because of the low temperature requirement for tuber formation. The edible portion or tuber is a modified underground stem.
Potatoes are not suitable for raw consumption. Only cooked potatoes can be consumed. Potato skins are also edible. Potatoes can be consumed by cooking in several ways. There are different types of potatoes suitable for different food purposes. For example, table potatoes are good for boiling and steaming purposes while baking potatoes are good for baking, frying and roasting purposes. Chipping potatoes are good for making various types of potato chips, crisps and French fries.
There are thousands of food preparations that involve cooked potatoes in various forms. Potatoes can be cooked alone or in combination with other vegetables and food ingredients.
Potatoes can be boiled, steamed, baked, roasted, fried, mashed and sautéed for making different types of food dishes.
Steamed and boiled potatoes are used as a staple food and as a breakfast food. Fried and curried potatoes are used as vegetables. Deep fried potatoes are used as snacks; for example, French fries.
Potatoes are used for making different types of vegetable preparations with/without other vegetables and with/without spice mixtures. Potatoes may also be used for making potato pies, potato chips, potato stew, potato soup, potato casserole, potato dumplings, potato pancakes etc.
